This simple recipe takes everything you love about apple pie and stuffs it into tender, baked apples.
Made with just five ingredients and ten minutes of prep time, these grain-free baked apples are a cinch to bring together.
Each cored apple is stuffed with a mixture of almond flour, coconut sugar and grass-fed butter (coconut oil works, too) that complements the natural sweetness of the apples. Then the apples are sprinkled with crumbled raw almonds for a grain-free crunch!
When picking out your apples, choose a brand that’s generally soft, like Gala. Tougher apples like green apples or Honeycombs will work, however, they may need more time baking in the oven to soften them. You want them to be soft and tender when you take them out of the oven.
When slicing and coring your apples, be sure to leave the skin on. The skin is where the fiber is and it also holds the apples together while they bake in the oven.

The best part about eating these baked apples is layering on the toppings. Homemade coconut yogurt and a sprinkle of cinnamon is always a tasty way to top them. For a more decadent twist, top them with a scoop of coconut milk ice cream and drizzle on melted dark chocolate!

These Healthy Baked Apples Taste Just Like Apple Pie, Without the Crust

- Sheet pan
- Parchment paper
- Food processor
- Mixing bowl
Ingredients
- ¼ cup raw almonds
- 4 medium Gala apples, washed, sliced in half and cored
- 3 T grass-fed butter (or coconut oil, melted)
- 2 ½ T coconut sugar
- 2 ½ T almond flour
Instructions
- Preheat the oven to 350°F. Line a sheet pan with parchment paper.
- Place the almonds in a blender or food processor and pulse until it resembles granola.
- Place the cored apples on the sheet pan with the flesh side facing up.
- Combine melted butter, coconut sugar and almond flour in a bowl. The mixture should be slightly loose and a sticky.
- Place 1 heaping tablespoon of the mixture in the center of each apple.
- Sprinkle the top of each apple with 1 teaspoon of the blended almonds. Bake uncovered for 30-35 minutes.
- Remove from the oven and serve hot with a scoop of coconut milk ice cream, dairy-free yogurt or any of your other favorite toppings!
