The secret to this juicy slow cooked pulled pork? Pumpkin purée! When added to BBQ sauce, it transforms into a lightly sweet pork coating that will have your mouth watering!
Start with a plain, Paleo-friendly BBQ sauce (we like this BBQ sauce recipe) and add pumpkin purée, maple syrup, apple cider vinegar and a few simple spices to create a balance of sweet and tangy. You can also sub molasses for the maple syrup for a less sweet, more seasonal taste!

This pumpkin BBQ sauce pairs perfectly with pork roast, but you could use chicken or turkey instead if you prefer. Start by rubbing the pork with salt and pepper to help it break down in the slow cooker, making it easier to shred once it’s cooked.
All you need is 10 minutes of prep work. Simply pour the pumpkin BBQ sauce over the prepared pork roast, set the crockpot to High and cook for two and a half hours. Then shred the meat with two forks before returning to the slow cooker for another 30 minutes.
Serve your pumpkin BBQ pulled pork over cauliflower rice or zucchini noodles, and top with fresh parsley for garnish.

Slow Cooker Pumpkin BBQ Pulled Pork

Ingredients
- 1 T extra virgin olive oil
- 1 lb pork roast
- 2 ½ cups BBQ sauce
- ½ cup pumpkin purée
- 1/8 cup pure maple syrup
- 1 T apple cider vinegar
- 1 t garlic powder
- ½ t onion powder
- ½ t paprika
- Salt & pepper to taste
Instructions
- Pour the extra virgin olive oil into the slow cooker and turn it on high.
- While the slow cooker heats, sprinkle the pork roast with salt and pepper. Rub it into the roast with your hands on both sides, then place in the slow cooker.
- Make the pumpkin BBQ sauce by mixing together BBQ sauce, pumpkin purée, maple syrup, apple cider vinegar, garlic powder, onion powder and paprika together in a bowl.
- Pour the sauce over the pork roast.
- Cook on high for 2 1/2 hours.
- Once the pork is cooked, remove it from the slow cooker and shred using two forks.
- Place the pork back in the slow cooker and cook another 30 minutes.
- Serve immediately or store in an airtight container in the refrigerator up to 5 days.
