Breadless cucumber subs stuffed four different ways!
If you are looking to switch up your lunch routine, we have the recipe for you. This lightened-up take on traditional sub sandwiches uses cucumber as the “bread” for a hydrating, handheld lunch that is anything but boring. Simply slice cucumbers in half lengthwise, scoop out the seeds and get to filling your cucumber subs!
Tips
– No need to peel the cucumbers; the peel houses phytochemicals which boost collagen and also contain fiber.
– Use large cucumbers to get the most room for filling.
– Try to use cucumbers that are straight rather than curved so that they don’t tip over.

Banh Mi
This French-Vietnamese sandwich is known for scrumptious slices of pork, pickled vegetables and a rich sauce consisting of mayo and sriracha (drool!). To make this recipe Paleo and ready in a pinch, pork can be pan-seared along with mint, turmeric, ginger, or even brushed with tahini paste before cooking. Next, finely chop the pork and toss with chopped and shredded veggies, then mix it all with a generous squeeze of lime juice. Pile into your hollowed out cucumber “slice” and top with a drizzle of Paleo sriracha mayo.

Ingredients
- 1 large cucumber
- 1 4-oz. pasture-raised pork chop, cooked and diced
- 1 small carrot, shredded
- 2 radishes, thinly sliced
- 1/4 cup red onion, thinly sliced
- 1 T fresh cilantro, finely chopped
- 2 T fresh lime juice
- 1 T Paleo Sriracha
- 3 T Paleo mayonnaise
Instructions
- Halve the cucumber, slice off the ends and use a spoon to scoop out center.
- In a mixing bowl, stir together pork and vegetables. Stir in lime juice. In a separate bowl, stir together Paleo sriracha and mayonnaise.
- Spoon pork mixture into cucumber halves, top with cilantro and drizzle sriracha mayonnaise on top.

For you veggie lovers, this Greek-inspired combo pairs chopped olives along with antioxidant-rich tomatoes, onion and fresh basil. A drizzle of extra virgin olive oil adds healthy fats. If you want to add protein, grilled chicken or shrimp would be fantastic add-ons.

- In a mixing bowl, combine chicken, celery, walnuts, cranberries, mustard, mayonnaise and honey. Stir well to coat.
- Spoon into cucumber halves. Serve chilled.
Deviled Egg
This rich filling is like a deconstructed deviled egg. Hardboiled eggs combine with Paleo mayonnaise, mustard, and fresh dill to form a super-rich salad full of protein, healthy fat and CLA. The real game changer here is the topping of crumbled bacon, adding smoky flavor to every bite.

Instructions
- Halve the cucumber, slice off the ends and use a spoon to scoop out center.
- In a mixing bowl, use a fork to mash yolks of hardboiled eggs. Gently mix with mayonnaise, mustard, dill and chopped egg whites.
- Spoon into cucumber halves. Top with crumbled bacon.
