Made mostly of water, they’re a great way to stay hydrated and make the perfect grain-free sandwich. As the inner seeds get scooped out, these cucumbers are stuffed, chilled, and sliced into tiny bites of savory perfection. When shopping for cucumbers, look for ones that are uniform in size and shape. This will make it easier to slice and sturdier to hold fillings.

The filling is a creamy combination of mayonnaise, nutritional yeast, bell pepper, and jalapeño. It creates a spicy cheesy flavor that’s similar to jalapeño poppers and comes loaded with brain-boosting fats (thanks to avocado oil). To replace commercial mayonnaise, this recipe uses a homemade Paleo mayo that’s made with zero additives or sugars. A splash of apple cider vinegar helps balance your gut health while also aiding in digestion and boosting probiotics. Tip: Use this Paleo mayo in salad dressings and marinades.
To get started, slice a cucumber in half lengthwise. Use a spoon to scoop the seeds out from the center of the cucumber and discard. In a small bowl, stir together the mayonnaise, nutritional yeast, and peppers. Avoid creating a mixture that is too moist since it won’t stay put when the cucumbers are sliced. If needed, add an additional tablespoon of nutritional yeast to thicken it up.
Next, spoon the mixture into two cucumber halves, overfilling slightly. Top with the remaining cucumber halves and squeeze gently to seal. Place in the refrigerator for 20 minutes to set. When ready, slice into half-inch bites and serve chilled.

- 1/4 cup bell pepper, minced
- 1/2 a small jalapeño, minced
- 2 T nutritional yeast
- Slice cucumbers in half lengthwise. Use a spoon to scoop the seeds out of the center and discard.
- In a small bowl, stir together the mayonnaise, nutritional yeast, and peppers. Spoon the mixture into two cucumber halves, overfilling slightly. Top with the other cucumber half and squeeze gently to seal. Place in the refrigerator for 20 minutes to set.
- Slice horizontally into ½-inch bites and serve chilled.
