You can whip up these pecan-crusted chicken breasts with just a handful of ingredients. Simply dredge chicken in an egg wash, cover in a fine meal of pecans, and bake for just 20 minutes – perfect for a weeknight meal.
Start by preheating the oven, and add a baking pan greased with coconut oil to warm up. Meanwhile, grind pecans in a food processor until you get a fine meal. Add the pecans to a bowl and mix with garlic and parsley. Prepare a separate shallow dish with two beaten eggs.

Dip the chicken breasts in the eggs before coating them with the pecan meal, pressing firmly to thoroughly coat on both sides. Add the chicken to the heated baking sheet (careful, it’ll be hot!) in a single layer and bake for 20 minutes, flipping over halfway through.
Serve your pecan-crusted chicken with a side of fresh salad and a dressing of olive oil and vinegar.

Ingredients
- 4 thinly sliced chicken breasts (approximately 1 pound in total)
- 1 ½ cup pecans
- ½ T dried garlic
- ½ T dried parsley
- 2 eggs, beaten
- 2 T coconut oil
Instructions
- Preheat oven to 350°F.
- Grease a large baking sheet with coconut oil.
- Process the pecans in a food processor or blender until fine.
- Transfer to a bowl and mix with garlic and parsley.
- Break the eggs in a separate shallow bowl, and beat well.
- Dredge the chicken breasts fully in the beaten eggs, then press the chicken in the pecan meal mixture. Coat thoroughly on both sides, shaking off any excess.
- Add the chicken to the heated baking sheet (remember, it’ll be hot!) in a single layer and bake for 10 minutes.
- Flip the chicken and cook 10 more minutes. Serve immediately.
