Tips:
- Use a tablespoon to fill your your gift jars, and if the jar’s opening is small, cut the bottom off of a plastic cup and use as a funnel.
- Use the end of a wooden spoon to level each ingredient before adding the next one.
Cranberry and Walnut Granola
Cranberry and Walnut Granola
Dry Ingredients:
- 2 cups coconut flakes
- 1 ½ cups walnuts
- ¼ cup sesame seeds
- 2 T chia seeds
- ⅓ cup dried cranberries
- ¾ cup raw pumpkin seeds
- ½ t cinnamon
Wet Ingredients:
- ⅓ cup honey
- 1 t vanilla extract
- 2 T coconut oil
- Preheat the oven to 300°F. Line a baking sheet with parchment paper.
- In a bowl toss the walnuts, coconut flakes, pumpkin seeds, sesame seeds, chia seeds and cinnamon.
- Heat the honey, coconut oil and vanilla extract in a small saucepan over medium heat. Pour over the walnut-seed mixture and stir to combine.
- Spread the granola over the prepared sheet. Bake for 20-25 minutes, stirring halfway, until the coconut flakes are golden-brown and crisp.
- Remove from the oven and let sit for 10 minutes without stirring it, this allows the granola to form clusters.
- Cool to room temperature and store in mason jar.
Chocolate Chip Pancakes

Dry Ingredients:
- 1 ½ cup almond flour
- 1 cup tapioca flour
- 1 t baking soda
- ¼ cup chocolate chips
Wet Ingredients:
- 3 eggs
- 2 tablespoons honey
- ¾ cup coconut milk
- In a large bowl, whisk together eggs, add honey and coconut milk.
- In a separate bowl, mix almond flour, tapioca flour, baking soda and chocolate chips.
- Pour the wet ingredients onto the dry ingredients, mix lightly until just combined.
- Grease a large skillet with coconut oil and heat on medium-low. Pour batter using a ¼ cup measuring scoop.
- Cook for 2 -2 ½ minutes until holes begin to appear at the surface of the pancake, flip and cook for another two minutes. Remove from the heat and repeat for the rest of the batter.
Paleo Instant Hot Chocolate

Dry Ingredients
- ⅔ cup cocoa powder
- 1 cup coconut milk powder
- ½ cup coconut sugar
- ¼ cup dark chocolate chips
- ½ t cinnamon
- ⅛ t salt
Wet Ingredients:
- Hot water
- Whipped coconut cream to garnish
- Place all the dry ingredients in a large bowl, stir until well combined. Return dry mixture to jar or in another airtight container.
- When ready to drink, for every 1 cup of hot water, add 2 ½ tablespoons of the dry mixture. Stir until the powder is dissolved and the chocolate chips are melted.
- Garnish with a dollop of coconut cream and dust with cocoa powder.
Chocolate Walnut Brownies

Dry Ingredients
- ¼ cup coconut flour
- 1 ½ cup almond flour
- ¾ cup cocoa powder
- ¾ cup chopped walnuts
- ½ cup chocolate chips
Wet Ingredients:
- 4 eggs
- ½ cups melted coconut oil
- ½ cup honey
- 1 teaspoon vanilla extract
- Preheat the oven to 350°F. Grease an 8 inch square baking pan and line with baking paper.
- In a large bowl, mix together dry ingredients. In another large bowl, mix together wet ingredients until well combined.
- Add wet ingredients to dry ingredients and mix well. Make sure to scrape the sides and the bottom of the bowl so no pockets of dry ingredients remain.
- Pour the batter into the prepared baking pan; top with walnut halves.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Remove from the oven; cool to room temperature before cutting and serving.
