Ripe blueberries and honey offer a natural sweetness without the need for refined sugars. If possible, opt for organic blueberries to reduce the risk of pesticide contamination and increase the amount of antioxidants. Lemon juice is added to the recipe as a good source of vitamin C and can help aid in weight loss and digestion. A touch of stevia is added to sweeten the deal, or you can add in a quarter cup of honey if you’re not following a strict keto diet.
To get started, place everything (except for the shredded coconut) into a blender. Pulse on high until smooth, scraping down the sides as needed. Spoon the mixture into the silicone molds and use a knife to smooth out the tops of each cavity. Note: An ice cube tray can be used in place of the silicone mold, but keep in mind this may alter the macros!
Next, sprinkle an even layer of shredded coconut over each mold and place in the freezer to set for one hour. When ready to serve, pop the bites out of the mold and enjoy! Store them in the refrigerator for up to 10 days or 30 days in the freezer.

Ingredients
- 1 cup coconut butter
- 1/2 cup coconut oil
- ½ cup blueberries
- 1 T lemon juice
- 1 t stevia
- 1 T shredded coconut, unsweetened
Instructions
- Place the coconut butter, coconut oil, blueberries, lemon juice and stevia in a high-speed blender. Blend on high until smooth. You may need to scrape down the sides after blending to ensure the entire batch is smooth.
- Spoon the mixture into the cavities of the silicone molds. Use a knife to smooth out the tops of each cavity.
- Sprinkle the shredded coconut over each cavity.
- Place in the freezer for one hour to set, or until the bites harden.
- Remove from the freezer and pop the bites out of the molds.
- Keep in the refrigerator up to 10 days or in the freezer for 30 days.
