I love having a protein-packed RX Bar in the late afternoon to last me till my next meal, but to be honest, store-bought RX Bars can be quite costly. For a healthier, Paleo-friendly alternative, these homemade Copycat Blueberry RX Bars can be whipped up in a jiffy with ingredients that you already have in your pantry. Most importantly, these bars are way cheaper and taste even better than the packaged ones!
Each blueberry RX bar boasts tons of protein thanks to almonds, cashews, and hemp seeds. They’re all bound together by dates and flavored with fresh blueberries.
With the help of a food processor or a blender, this super simple blueberry RX bar recipe only requires 20 minutes of active hands-on time. Add one hour of chill time, then slice into bars to keep on hand for a boost of energy whenever you need it.

Start off by soaking pitted Medjool dates in hot water to let them hydrate a little. While the dates soak, process the almonds, cashews, and hemp seeds until you get a fine meal, then set them aside. Next up, process the soaked dates and the fresh blueberries together to form a sticky paste, and then return the processed nuts and seeds back to the food processor, combining them until you get a homogenous mixture. Press the mixture down into a 9 x 9 inch parchment-lined pan, chill for at least an hour, and then slice and eat!

No-Bake Copycat Blueberry RX Bar

- Small bowl
- Food processor or blender
- 9x9 baking pan
- Parchment paper
Ingredients
- 1 ½ cups pitted Medjool dates (approximately 18)
- 2 cups hot water
- 1 cup raw shelled hemp seeds
- 1 cup raw almonds
- ¾ cup raw cashews
- ½ cup fresh blueberries
- 1-2 T of water, as needed
Instructions
- Cut the dates into pieces before soaking them in the hot water for at least 10 minutes.
- Combine the hemp seeds, almonds, and cashews in the bowl of your food processor; process until you get a fine meal. Remove and set aside for later.
- Drain the soaked dates of any excess water, then add the dates and the blueberries to your food processor; process until you get a thick, sticky paste.
- Add the processed nuts and seeds back to the food processor and process until it is well combined (you may have to do it in two or three batches depending on the size of the bowl). If necessary, add a tablespoon or two of water to make it easier to blend.
- Line a 9 x 9 inch baking pan with parchment paper and press the mixture down into the pan.
- Refrigerate for at least 1 hour, then slice into 16 square bars.
Tips:
- I’ve used fresh blueberries in this recipe, but you can substitute the fresh berries for dried ones in the same amount. Just make sure to add one extra tablespoon of water to the mixture.
