To start, chop your bacon into 1-inch pieces and sauté in a skillet over medium heat for ten minutes. Drain the bacon, reserving a tablespoon of fat to cook the sweet white onions for an additional five minutes. Then, stir in garlic and cook for one minute before adding in monk fruit sweetener, apple cider vinegar, water, and rosemary. Reduce the heat and let the bacon jam simmer for 10 minutes, stirring frequently. Remove the jam from the heat and allow it to cool slightly before pulsifying everything in a food processor. Ingredients
- 1 lb sugar-free, pasture-raised bacon
- 1 cup chopped sweet white onion
- 2 T apple cider vinegar
- ½ cup water
- 1 sprig of rosemary
- 1/8 t monk fruit sweetener
Instructions
- Chop the bacon to 1-inch thick and sauté in a medium skillet over medium-high heat until just browned, about 12 to 15 minutes, stirring occasionally. Drain the fat, reserving approximately 1 tablespoon.
- Stir in the onion and continue cooking until the onion starts to soften, about 5 minutes. Add monk fruit sweetener, apple cider vinegar, water, and rosemary. Bring the mixture to a low boil and reduce the heat to medium-low. Stir regularly simmering for 10 minutes. Allow the mixture to cool for 10 minutes.
- Pour into a food processor and pulse to desired consistency. Store in airtight jars in the refrigerator.
