Feel free to add or substitute any of your favorite in-season fruits to keep this recipe fresh. Cantaloupe, grapes, apples and oranges are great options. Add a few leaves of fresh mint to your fruit salsa to make the flavors really pop!
The recipe makes enough for four servings, or enough to fill one half of a sliced pineapple. If you’re bringing it to a party or cookout, you’ll want to double the recipe to feed a larger crowd.
Serve this fruit salsa with plantain or sweet potato “chips” (just make sure to sprinkle the sweet potato slices with cinnamon and coconut sugar instead of salt and pepper).
Tip: If you’re preparing the fruit salsa ahead of time, store the fruit and lemon juice mixture separately to keep it fresh. When you’re ready to serve, toss the fruits salsa with the lemon juice, then add to the pineapple bowl.
