You can get the mini pumpkins at almost any grocery store in the fall. If you don’t have any around, though, feel free to use mini butternut squash for the “bowl.”
Any red apple will do in this recipe. Fuji and gala apples tend to be the sweetest of the red variety, while pink ladies are the tartest of the bunch. Once you choose your apples, simply saute them in a skillet with the pecans and pumpkin until the apples soften.

Although I usually caramelize fruit with coconut oil, I opted to use ghee for a change of pace. The ghee coated the apples in a nice, savory flavor, balancing the fruit’s sweetness.
For the pumpkin seeds, you can just scrape them out—just make sure to rinse off all the gooey pumpkin meat before using them.
These stuffed pumpkins make for great party treats. If you have little ones, this is an easy healthy dessert the entire family can help make. Simply prep all the ingredients beforehand, “mise en place” style, and let the kids make their own pumpkin creations. If you want to get super decadent with it, drizzle a little bit of maple syrup inside the pumpkin before popping it in the oven.

Mini Pumpkin Stuffed with Caramelized Cinnamon Apples
Ingredients
- 2 mini pumpkins
- 3 T ghee
- 2 apples, chopped into bite-size pieces
- ¾ cup pecans
- ¼ cup pumpkin seeds
- 1 T coconut sugar
- ¼ t cinnamon
Instructions
- Preheat oven to 375°F.
- Slice the tops of both pumpkins off and set them aside.
- Scrape the seeds out of the pumpkins and place them in a bowl. Next, rinse the pumpkin seeds so that any pumpkin filling is removed.
- Heat ghee in a large skillet and place apples, pecans and the pumpkin seeds into the skillet. Stir occasionally until apples are soft.
- Distribute mixture evenly into both pumpkins and top with the pumpkin “lids.”
- Place the pumpkins in a baking dish and bake for 45-55 minutes.
- Remove from oven, sprinkle with more cinnamon, and enjoy!
