Purple Sweet Potato, Red Kale & Russian Tomato Frittata

1 small purple sweet potato, sliced
1 tablespoon ghee (or olive oil)
1 onion, chopped
1 cup chopped red kale leaves (stems removed)
6 eggs, whisked
3 dark Russian tomatoes, quartered
small handful chopped parsley
salt and pepper
Cook the sweet potato in simmering water for 5-8 minutes or until tender. Drain.
Heat the ghee in a skillet on medium heat and add the onion, fry until the onion begins to turn golden brown then add the kale. Cook for 3-4 minutes or until the kale has slightly wilted.
Gently place the slices of sweet potato into the pan until all of the slices are layered on top of each other. Pour the whisked eggs into the skillet then cover.
Cook on low heat for 10-15 minutes or until golden underneath and set on top.
Place the tomatoes on top then sprinkle with chopped parsley. Season with salt and pepper to serve. [author_bio name=”yes” avatar=”yes”]
