The Internet is full of Paleo (and not-so-Paleo) chicken cacciatore recipes. The trick is finding one that is perfect for you, your family, and your tastes.
You can use a whole chicken, breasts or thighs, a sauté pan or a slow cooker, and a complicated ingredients list or just a few ingredients.

Personally, I prefer a short ingredients list and to use a slow cooker, because I like to just throw everything in the pot and come back to a perfectly cooked meal in six or eight hours. I have used a whole chicken, boneless breasts, bone-in breasts, and thighs; the bone-in cuts add more flavor but what I use typically depends on the sale prices for pastured chicken.
This recipe, which I altered from one I found on Nom Nom Paleo, serves six so you can adjust downwards if you don’t want leftovers…but it reheats beautifully!
Try serving it over cilantro lime cauliflower rice!
Pro Tip: If you like your sauce thickened, pre-cook this dish, cover and refrigerate overnight, then re-heat and simmer it down to reduce the liquid.

Paleo Crockpot Chicken Cacciatore Recipe
Ingredients
- 3 lbs chicken
- 2 T of butter or oil of your choice
- 1 large onion, minced
- 1/4 c tomato paste
- 1 1/2 t of dried oregano
- 2 to 3 cloves of garlic, minced (add more if you love garlic)
- 1/4 t of red pepper flakes (more or less depending on your preferences for spicy meals)
- 1 can of diced tomatoes, drained
- 1/2 cup of chicken stock
- 2 lb of cremini or white mushrooms, quartered if large, halved if small
- 1/2 cup of red wine (optional)
Instructions
- Cook the butter, onions, tomato paste, oregano, garlic, and red pepper flakes in a small saucepan until the onions are soft.
- Put the onion mixture into the crockpot.
- Stir in the tomatoes, chicken stock, mushrooms, and wine, if using.
- Season the chicken pieces with salt and pepper and add them to the crockpot.
- Mix everything together.
- Cover and cook on low for four to six hours.
