Bursting with juicy chicken and caramelized sweet potatoes, this easy one-tray recipe will have dinner on the table in under 40 minutes.
On busy weeknights, you can’t top a simple single tray recipe. The only prep you need to do is slice the chicken breast and sweet potatoes into bite-sized cubes. Drizzle them both with olive oil and then sprinkle with paprika, garlic powder, cumin and honey. Toss everything together, cover with foil and bake for 20 minutes.
Finally, remove the foil and bake for another seven minutes to make sure the chicken is fully cooked through. The flavors marry as everything bakes together, and the sweet potatoes soak up all the delicious flavors of the chicken, making for a hearty and comforting meal.

- Large rimmed baking tray
- Parchment paper
- Tin foil
Ingredients
- 2 medium sweet potatoes, cubed
- 1 lb chicken breast, cubed
- 2 T olive oil
- 1 t paprika
- 1 t garlic powder
- 1 t cumin
- 1 T raw honey
- Salt and pepper to taste
- ⅓ cup dried cranberries
- 3 T pecans
Instructions
- Preheat the oven to 400°F and line a baking tray with parchment paper.
- Combine the sweet potatoes and chicken on the prepared baking tray. Drizzle with olive oil, then add the seasonings and honey. Toss to coat and spread into an even layer.
- Cover with foil and bake for 20 minutes.
- Remove the foil and bake for another 7 minutes, or until the chicken is cooked through.
- Toss with cranberries and pecans and serve immediately.
