- 1 lb medium shrimp, peeled and deveined, tail on
- 2 lemons, halved and sliced
- 1 T lemon zest
- 1 T chili flakes
- 3 garlic cloves, minced
- ¼ cup fresh lemon juice
- 2 T fresh parsley, chopped
- Salt to taste
Instructions
- Soak the wooden skewers in water for 10 minutes.
- Heat the grill on medium heat and grease with olive oil.
- Thread the shrimp and halved lemon slices onto the wooden skewers. Place the skewers in a single layer onto the grill. Sprinkle the lemon zest, red chili flakes, and minced garlic on top. Cook until the shrimp have turned pink, and the flesh is firm (about four minutes per side).
- Place the shrimp skewers on a plate. Drizzle with lemon juice, garnish with fresh parsley and serve.
