Transform your leftover Thanksgiving turkey into an easy meal in this one-pan skillet recipe!
If you’re looking for a light way to use up those hefty Thanksgiving leftovers, shred up the turkey and try this grain-free recipe full of veggies smothered in gravy. Quick prep and easy cleanup makes this healthy dish a welcome meal after all the holiday festivities.
Turkey is full of minerals that help support healthy muscle functioning and keep bones strong. To get all the nutrients possible from your bird, be sure to purchase a pasture-raised turkey that wasn’t treated with antibiotics or hormones.
You can use any leftover turkey meat you have on hand, but I opted for a combination of light and dark thigh, breast and leg meat. This adds dimension and more complex flavor in each bite. Mushrooms compliment the rustic, earthy flavor of this dish, but if you have other fresh veggies like cauliflower florets or carrots, those would be a great addition as well. This recipe uses rosemary for bright flavor, sage or thyme will work, too.

Make sure you keep your leftover gravy to make this one-pan turkey skillet taste like the holidays all over again. If you don’t have leftovers, you can buy organic turkey gravy at the store, or sub in bone broth for a flavor that is just as rich.
Start by melting the ghee in a large skillet and sauté the onions until soft and light golden brown. Next, add mushrooms, rosemary and garlic and continue to cook until the mushrooms are softened. Stir in the gravy and bring it to a simmer. Add the shredded turkey meat and simmer for 5 to 7 minutes until the turkey is thoroughly heated. Serve while it’s hot!

Ingredients
- 1 T ghee
- 1/2 sweet white onion, thinly sliced
- 2 cups sliced cremini mushrooms
- 1 sprig fresh rosemary, leaves only
- 1/2 t garlic, minced
- 1/2 cup gravy
- 1 lb leftover shredded turkey
Instructions
- Melt the ghee over medium heat in a skillet. Add the onions and cook for 5-7 minutes, stirring occasionally until the onions soften and begin to brown.
- Add the mushrooms, rosemary and garlic, and cook for 7 minutes longer, stirring occasionally.
- Stir in the gravy and bring it to a simmer. Add the turkey; cook for 5 minutes to heat through. Serve immediately.
