Any recipe that calls for breadcrumbs can have you scratching your head if you follow a Paleo style diet. Luckily, having these finely ground almond crumbs with a hint of herb flavor on hand will make dinnertime a cinch without sacrificing the crisp texture you know and love.
Finely ground almonds are the backbone of these healthy breadcrumbs in this one-step recipe. Full of Omega-3 fatty acids, vitamin E, and protein, almonds are ideal for supporting brain function as well as fending off conditions like Alzheimer’s and heart disease. The skin of almonds contains powerful antioxidants, making it a better choice than blanched almonds. Walnuts or cashews might also work in this recipe if you prefer them.
Start by combining almonds and dried herbs in a food processor and pulsing on high speed until the nuts are finely ground. Be careful not to overgrind, or the almonds may release too much of their natural oil and clump together. Pour the seasoned breadcrumbs into an airtight container and store in a dry, cool spot. Because almonds can spoil quicker than standard bread crumbs, I recommend using yours within a month.
