Green Beans with Scrambled Eggs and Sausages
Ingredients
- 1 tablespoon olive oil
- 2-4 Paleo-friendly sausages (depending on size)
- 1 1/4 cups green beans, top and tailed
- 6 eggs
- freshly ground black pepper
How To Make It:
- Heat a frying pan over medium heat and add the olive oil and sausages, cook, turning occasionally for 6-8 minutes or until golden brown and cooked. Allow to cool slightly, then slice into rounds.
- Meanwhile, place the green beans in a pan of boiling water and cook for 5-10 minutes or until tender. Drain the water from the pan, then add the sausages and combine.
- Wipe the frying pan clean, the return to low-medium heat. Crack the eggs into the pan and use a spatula to gently scramble the eggs together for 3-4 minutes while they cook.
- Once the scrambled eggs have cooked add to the pan with the green beans and sausages along with good crack of black pepper and combine.
- Serve.
