Here’s a lunch that will hold you over until dinner, and then some. Packed with a gorgeous array of fresh vegetables, this epic salad goes great with some Paleo teriyaki chicken.

Ingredients
- 1 cup sweet potato, finely diced
- 1/2 avocado, diced
- 1 cup hemp seeds and/or hemp hearts
- 2/3 cup chopped pecans
- 1/2 red bell pepper, diced
- 1 cup alfalfa sprouts
- few sprigs of parsley
How To Make It:
- Place the diced sweet potato in a pan of boiling water and cook for 10 minutes or until tender, then drain.
- Meanwhile prepare your salad ingredients and begin placing them into your serving bowl, placing each set of ingredients in a ‘cake slice’ area next to each other until the bowl is filled. Add the sweet potato last.
- Place a few sprigs of parsley into the center of the bowl to serve.
