Few things can beat a tall glass of ice-cold lemonade on a hot day. Made in just five minutes, this recipe combines fresh lemon juice and coconut yogurt for a frozen treat without the dairy! Instead of using dairy-based yogurt, this recipe uses coconut yogurt as a healthier alternative. Along with adding extra cream, it’s filled with probiotics to keep your gut health in check. Many health food stores carry it pre-made or you can make your own coconut yogurt at home! Added coconut cream, maple syrup, and vanilla extract help keep things naturally sweet.

Using crushed ice creates a smoother texture. The key is to add it in last so that it creates a signature slushy mixture. If you don’t have any on-hand, simply crush ice cubes in a blender and pulse for a few seconds.
To get started, combine fresh lemon juice, maple syrup, coconut yogurt, coconut cream, and vanilla extract together in a blender. Blend until well combined. Then, add the crushed ice in last and continue pulsing. Divide the mixture evenly between two glasses. Garnish each glass with a slice of fresh lemon and enjoy!

Ingredients
- ⅓ cup fresh lemon juice
- ⅓ cup maple syrup
- ½ cup coconut yogurt
- 1 cup coconut cream
- 1 t vanilla extract
- 3 cups ice, crushed
- 2 lemon slices, for garnishing
Instructions
- In a high-speed blender, combine all the ingredients together (except for the crushed ice).
- Blend until smooth and then add the ice in last. Continue pulsing until you get a smooth texture.
- Pour the mixture evenly between two serving glasses. Garnish each glass with a slice of lemon and enjoy!
