Chewy, creamy and entirely Paleo-friendly, this salted cashew butter fudge is about to be the best thing in your freezer.
I never knew how easy it was to make fudge, until I made this recipe. All you need is five minutes of prep time, and the freezer does the rest!
This healthy freezer fudge is made from only four wholesome ingredients: cashew butter, coconut oil, maple syrup and just a dash of vanilla extract. Unlike traditional homemade or store-bought fudge, this freezer fudge contains no butter, condensed milk, refined sugar or dairy. Instead, this healthy freezer fudge is packed with protein, healthy fats and fiber!
To make this cashew butter fudge, simply whisk all the ingredients together in a saucepan over medium heat until a creamy smooth mixture is formed. Pour into silicone molds or muffin liners in muffin tins and sprinkle with sea salt flakes and chopped cashews. Pop into the freezer for at least one hour for it to harden.

Take the fudge out of the freezer and let it soften for a few minutes before eating. Then bite into your decadent dessert and savor!

Coconut Oil Cashew Butter Freezer Fudge

- Saucepan
- Mini muffin pan
- Mini muffin silicone liners
Ingredients
- ⅓ cup coconut oil
- ½ cup maple syrup
- ⅓ cup cashew butter
- 1 t vanilla extract
- Chopped cashews (optional topping)
- Sea salt flakes (optional topping)
Instructions
- Line a mini muffin pan with mini muffin silicone liners.
- In a saucepan over medium heat, whisk together the coconut oil, maple syrup and cashew butter.
- Bring to a boil while stirring constantly. Continue to boil for about two minutes, or until the mixture thickens a bit. Stir in the vanilla extract.
- Pour the fudge into the prepared silicone liners, and top with chopped cashews and flaked sea salt. Freeze for about one hour.
- Let it thaw for a few minutes, and enjoy!
Tip: You can also make this fudge as a single layer sheet! Line a small pan with parchment paper and grease with olive oil before pouring in the fudge mixture.
