If you love spicy buffalo chicken, this is the salad for you! Shredded chicken replaces wings and gets covered in a homemade buffalo sauce for a low carb, high-protein lunch that satisfies.
Instead of store-bought Buffalo sauce filled with toxic preservatives and trans-fat, this recipe uses grass-fed ghee, apple cider vinegar and Paleo hot sauce for a rich, buttery flavor. Paleo mayonnaise is added at the end for a creamy texture filled with healthy fats.

Start with cooked, shredded chicken breasts. You can slow cook or boil until tender enough to shred. In a saucepan, combine ghee, apple cider vinegar and hot sauce to form a smooth Buffalo sauce.
Add the chicken to a bowl with chopped green onion and celery. Pour the Buffalo sauce over the chicken and stir to coat. Once the chicken absorbs the rich flavor, stir in Paleo mayonnaise until well incorporated. Cover and refrigerate for 30 minutes before serving. For a handheld salad, spoon into Bibb lettuce cups.

Ingredients
- 2 T ghee
- 1 T apple cider vinegar
- ¼ cup Paleo hot sauce
- 2 lbs Pasture-raised chicken breast, cooked and shredded
- ½ cup celery, finely chopped
- ¼ cup green onion, finely chopped
- ⅓ cup Paleo mayonnaise
Instructions
- In a small saucepan over low heat, stir together the ghee, apple cider vinegar and hot sauce until melted.
- In a mixing bowl, combine the shredded chicken, celery and green onion.
- Pour the buffalo sauce over the chicken and stir to coat. Add the mayonnaise and stir well.
- Refrigerate for at least 30 minutes before serving.
