The trickiest part of making sweet potato toast is ensuring that each slice gets toasted long enough to cook it through. No one wants raw, crunchy sweet potato. Every toaster is different, so you may have to play around to find what setting works best. If your toaster has multiple heat settings, I recommend using a higher temperature that will cook the slices longer. I have found that two to three rounds on the level 5 setting worked best for me and resulted in a softened sweet potato with some light charring. While your slices are toasting, you can prep the toppings.
To mimic smoked salmon and cream cheese, we created a cashew spread before topping with salmon and capers. For a more breakfast-forward dish, mashed avocado and a sunny-side up egg make a great on-the-go meal when piled on top of sweet potato toast. For a sweet combo, spread almond butter onto your toasted sweet potato and top with fresh banana slices and a sprinkling of cinnamon.

Ingredients
- 1-2 sweet potatoes, ends cut off and sliced ¼-inch thick
- 4 T almond butter
- 1 ripe banana, sliced
- Cinnamon for sprinkling
Instructions
- Cut ends off sweet potatoes and slice into ¼-inch slices.
- Place sweet potato slices in toaster. Toast. Flip over and toast once more. Some toasters may require additional toasting time.
- Spread almond butter onto sweet potato slices. Top with banana slices and sprinkle cinnamon.
Avocado Sunny-Side Up Egg Toast

- 1-2 sweet potatoes, ends cut off and sliced ¼-inch thick
- 1 avocado, mashed with fork
- 1 egg per slice of sweet potato toast
- Sea salt and black pepper to taste

- Cut ends off sweet potatoes and slice into ¼-inch slices.
- Place sweet potato slices in toaster. Toast. Flip over and toast once more. Some toasters may require additional toasting time.
- Spread avocado over sweet potato slices. Top with fried egg. Season with salt and pepper.

Salmon Caper Toast
Salmon Caper Toast
Ingredients
- 1-2 sweet potatoes, ends cut off and sliced ¼-inch thick
- 3 oz smoked salmon, sliced into 1-inch strips
- 1 T capers
- ⅓ cup Paleo cashew spread
- For Cashew Spread:
- 1/2 cup raw cashews
- 1 t nutritional yeast
- 1 T green onion, chopped
- Sea salt to taste
Instructions
- Cut ends off sweet potatoes and slice into ¼-inch slices.
- Place sweet potato slices in toaster. Toast. Flip over and toast once more. Some toasters may require additional toasting time.
- Spread cashew spread over sweet potato slices. Top with salmon and capers.
- For the Cashew Spread:
- Soak cashews in 1 cup of water overnight.
- Strain water. Add cashews and nutritional yeast to a high-speed blender or food processor. Blend until smooth. Stir in green onion and sea salt.
