Not including water, you’ll only need four ingredients for this recipe. First, you’ll need to cut fresh, ripe watermelon and freeze overnight. The next day, blend it up with a simple syrup made from lemon and lime juice, a sweetener of your choice, and mint.

Because watermelon is naturally sweet, I recommend using just a small amount of stevia in this recipe, but you can adjust the sweetness to your liking. You can also swap the stevia for honey, maple syrup, or date syrup.

- Small saucepan
- Blender
- 2 large glasses
Ingredients
- 4 cups sliced watermelon, frozen overnight
- ½ cup water
- ½ cup freshly squeezed lemon juice
- ¼ cup freshly squeezed lime juice
- Stevia to taste
- 4 mint leaves, plus more for garnish
- Lemon and lime slices, for garnish
Instructions
- In a small saucepan, add water, lemon juice, lime juice, stevia and mint leaves and bring to a low simmer. Simmer on low 5 minutes until fragrant. Turn off the heat and cool 5 minutes. Remove mint leaves and discard.
- In a high-speed blender or food processor, add the frozen watermelon and liquid from the saucepan. Process on high for 1 minute, scrape down the sides, and process again another minute.
- Transfer the mixture to 2 large glasses. Garnish with mint leaves, lemon and lime slices.
