Gently fold crumbled bacon and chopped chives into the egg whites, then form the cloud nests by mounding four spoonfuls onto a prepared baking sheet. Use the back of a spoon to make a dent in the middle of each mound. Bake for three minutes, then add the yolks to the dents. Bake for a few more minutes, or until the egg whites turns golden brown and the yolks are slightly set.
These baked eggs in clouds are an easy way to feed a large brunch crowd – just double or triple the ingredients as necessary. Serve them as they are, or use as a topping for salads or slices of Paleo toast.

- ¼ cup chopped chives
- ¼ cup crumbled bacon or pastrami
- Salt and pepper, to taste

- Separate the egg whites from the yolks. Using an electric hand mixer, whip the egg whites until fluffy and stiff peaks form.
- Carefully fold in the chopped chives and bacon using a spatula.
- Spoon four mounds of whipped egg whites onto the prepared baking sheet. Use the back of a teaspoon to make egg yolk-size wells in the center of each mound.
- Bake for three minutes, then remove from the oven and gently add a yolk into the center of each cloud. Return to the oven and bake for two more minutes.
- Remove from the oven, sprinkle with salt and pepper, and serve immediately.
Notes:
- This recipe bakes the egg yolks for two minutes, so they are still slightly runny. If you want them gooey, bake for three minutes. For completely set yolks, bake for 5 minutes.
- This recipe calls for bacon and chives, but you could also use other chopped fresh herbs, chillies, or your favorite Paleo cheese. Try experimenting!
