Dark chocolate has some of the highest levels of antioxidants and is a great source of minerals like iron, magnesium, and potassium. A good rule of thumb when looking for dark chocolate is to look for one that’s unsweetened and 70% cacao or higher. You can always add in your own natural sweetener later, during the melting process. Tip: If you’d like your bark to be sweeter, add up to ¼ cup of maple syrup.

The pistachios add a nutty flavor, while giving each bite a nice crispy crunch. This semi-salty flavor blends perfectly with the decadent dark chocolate and slightly sour goji berries.
To get started, melt the dark chocolate and coconut oil in a double boiler. Once the chocolate is melted, remove from the stove and stir in the pistachios and goji berries. Spread the mixture in an even layer onto a baking sheet and set in the freezer for one hour. When finished, break the bark into chunks and enjoy!

- Double boiler
- 8”x 8” baking sheet
- Parchment paper
Ingredients
- 2½ cups dark chocolate
- ¼ cup coconut oil
- 1 t almond extract or vanilla extract
- 2/3 cup pistachios, raw and unsalted
- ¼ cup goji berries
- 1 t sea salt
Instructions
- Melt the dark chocolate, coconut oil, and extract in a double boiler.
- Stir the ingredients for 8-10 minutes, or until it’s completely melted.
- Remove the ingredients from the heat and stir in the pistachios and goji berries.
- Transfer the batter onto a baking sheet lined with parchment paper.
- Smooth into a thin, even layer and sprinkle with salt.
- Place in the freezer for one hour to set.
- Remove from the freezer and break apart into desired sizes.
- Enjoy immediately or store leftovers in the freezer for up to 60 days.
