Warm, rich and fudgy, this Paleo Pumpkin Spice Skillet Brownie is the perfect dessert for two!
Filled with pumpkin purée and warm, comforting spices, this skillet brownie is a great fall dessert for two! The cast iron skillet is key to giving this brownie a slightly crusty outside, with a soft and fudgy texture on the inside. Exactly how a brownie should be!
Note, this recipe uses a 6-inch cast iron skillet, but if you don’t have a skillet, you can use a 5-6-inch round cake pan, 2 mini loaf pans, or even 4 muffin cavities. You may need to take those brownies out of the oven 3-4 minutes sooner, depending on your oven and how well done you like your brownies.
This recipe undercooks the brownies slightly by a few minutes to get them super gooey on the inside. For a skillet brownie that’s more well done, add 3-4 minutes to the baking time, and use a toothpick to check for doneness.

Serve your skillet brownie warm out of the oven topped with coconut ice cream and two spoons. Have leftovers? Keep them in the refrigerator, then reheat at 200°F for 10 minutes. It’ll be just as delicious on the second go-around!

- Mixing bowl
Ingredients
- 2 large eggs
- 4 T pumpkin purée
- 3 T coconut sugar
- 4 T coconut oil
- 2 T coconut flour
- 4 T cacao powder
- 1 T pumpkin spice
- ½ t baking soda
- ¼ t salt
- 2 T dairy-free chocolate chunks
Instructions
- Preheat oven to 350°F. Prepare a 6-inch cast iron skillet by lightly greasing with coconut oil.
- In a large mixing bowl, combine eggs, pumpkin purée, coconut sugar and coconut oil. Mix until smooth.
- Add coconut flour, cacao powder, pumpkin spice, baking soda and salt to the bowl. Fold until incorporated. Do not overmix.
- Transfer the batter to the prepared skillet and spread into a thin layer.
- Place chocolate chunks in the batter, pressing them lightly into the batter with your fingers.
- Bake for 12 minutes, or until slightly brown around the edges. The center will be soft and gooey.
- Serve hot with coconut ice cream.
