Fresh, spicy, and full of flavor, these Kofta kebabs make for the perfect weekend lunch.
Kofta (or Kefta) is often regarded as the Middle Eastern version of a hamburger. Kofta means grounded, and it can be made with lamb, beef, chicken, or even seafood or veggies. In this recipe, lamb mince brings a rich taste to the Koftas, while cinnamon sticks add an aromatic twist that’s both sweet and savory.
These Koftas are made without egg and breadcrumbs to bind them, so it’s important to chill the mixture in the fridge to firm up the meat before shaping and baking. For best results, make the mixture the night before. This not only helps the mince stick together, but allows the flavors to develop as well. Note: When placing the meat mixture in the fridge, make sure the bowl is covered with a lid to prevent the meat from drying out.
Since Koftas freeze well, you can make a batch to keep in the freezer for a quick weeknight dinner, too. Just make sure to pack them in an airtight container, then pop them in the oven when you’re ready to eat.

Spicy Kofta Kebabs Baked on Cinnamon Sticks

- Baking sheet
- Parchment paper
- Large bowl
Ingredients
- 1 lb lamb mince
- 2 garlic cloves, minced
- 1 T fresh mint, finely chopped
- 1 t ground coriander
- 1 t ground cumin
- ½ t ground chili
- Salt and pepper, to taste
- 6 cinnamon sticks
Instructions
- Preheat the oven to 350°F. Line a baking tray with parchment paper.
- In a large bowl, combine the lamb mince, garlic, mint, coriander, cumin, chili, salt and pepper. Mix well. Divide mixture into 6 equal pieces. Cover and chill in the fridge for 15 minutes.
- With damp hands, shape the meat around and along each cinnamon stick.
- Place kebabs on the baking tray. Bake for 25-30 minutes, until browned and cooked through. Remove from the oven and serve warm.
Tip: Add finely grated lemon zest to the meat mixture for a citrusy flavor!
