To get started, cook the bacon strips in a large skillet over medium-high heat for 10 minutes, or until crispy. Set the bacon aside on a plate lined with paper towels and then cut them into thin slices.
Next, fry the garlic with the remaining bacon fat left in the skillet. Add in the cabbage and cook until it becomes slightly wilted. Reduce the heat to medium and add in the vegetable broth with salt. Let the ingredients simmer until the cabbage is soft and tender.
Then, add the apple cider vinegar and stir well. Taste to see if it needs additional salt and transfer the cabbage to a serving dish. Top with crispy bacon slices and serve with two sunny-side up eggs.

- 5 slices thick-cut bacon
- 5 garlic cloves, chopped into large pieces
- 1 medium green cabbage (approximately 2 lbs), thinly sliced
- 2 cups vegetable broth
- 3 bay leaves
- 1½ t salt
- 1½ T apple cider vinegar
- 2 eggs
Instructions
- Place the bacon slices in a single layer onto a large skillet. Cook over medium-high heat for 10 minutes, or until crispy on both sides and fat is rendered.
- Once bacon is cooked, transfer the bacon strips to a plate lined with paper towels to soak up any excess oil. Cut the cooked bacon strips into 3-inch long slices.
- Add the chopped garlic to the skillet with bacon fat, stirring until fragrant.
- Add the sliced cabbage to the skillet and let cook undisturbed for five minutes before stirring. Cook for another eight minutes, or until all the cabbage wilts slightly.
- Reduce heat to medium heat and add the vegetable broth, bay leaves, and salt. Allow the ingredients to simmer until most of the liquid has evaporated (approximately 20 to 25 minutes).
- Remove the skillet from the heat and stir in apple cider vinegar. Season with extra salt if necessary.
- Transfer the stir-fried cabbage to a serving dish and set aside.
- Wipe the pan clean (careful, it may be hot) and cook two eggs sunny-side up.
- Top the cabbage with bacon slices and eggs before serving.
Tip: If you’re looking to make your own vegetable broth, it’s easy to do. Just combine three cups of chopped vegetables (including carrots, celery, onions, and garlic) with eight cups of water. Bring to a boil and let it simmer for three hours, before using.
