This Thin Mint Brownie milkshake is made by blending up five healthy ingredients. The thick part of a can of coconut cream is what gives this drink it’s creamy, dairy-free consistency while avocado and fresh spinach add vibrant green color. A ripe banana adds natural sweetness, and mint extract gives its signature Thin Mint taste. It’s almost too stunning to drink!

To make this milkshake truly stellar, it’s topped with a melted dark chocolate drizzle. Melt the chocolate with coconut oil in a double boiler, then use a spoon to drizzle some inside a glass jar. This will give the milkshake a nice chocolatey flavor without toning down that bright green color.
Top the milkshake with the remaining chocolate sauce, more coconut cream, and cacao nibs. You can also make your own Paleo Thin Mints and crush them over the top. Keep a few extra cookies on standby for dunking into the milkshake!

Scout’s Honor Thin Mint Brownie Milkshake
- Blender
- Double boiler
- Glass jar
For the Milkshake:
- 1 banana
- 1 avocado
- 2 cups spinach
- ½ t mint extract
- 1 14 oz. can coconut cream (cream part only)
For the Chocolate Drizzle:
- ¼ cup dark chocolate
- 1 T coconut oil
- Cacao nibs for garnish
- Place the banana, avocado, spinach, mint extract and coconut cream in a blender, reserving a tablespoon of the coconut cream. Blend on high until smooth.
- For the chocolate drizzle, melt the dark chocolate and coconut oil in a glass bowl over a double boiler of simmering water.
- Using a spoon, drizzle some chocolate on the sides of a jar.
- Pour the milkshake into the jar and top with reserved coconut cream, the remaining chocolate sauce and cacao nibs. Serve immediately!
