There aren’t many veggie side dishes that are easier to prepare than sautéed spinach. This quick recipe packs in nutrients and huge flavors with salty bacon, fresh shallots and garlic.

Start by cooking sliced bacon, and then cook the diced onions, minced garlic and olive oil. Once the onions start to soften, turn down the heat to low and add in the spinach last. You can keep your spinach leaves whole or shred them beforehand, if you prefer.
The trick with cooking spinach is to always put more in the pan than you think you will need. Its high water content means it reduces in size by about a quarter when cooked! Use tongs to rotate four cups of spinach until it just barely starts to wilt. Be careful not to cook the spinach too long – you want the leaves to be cooked, but not limp.
Garnish your sautéed spinach with fresh lemon slices, and serve alongside your favorite main dish!
Tip: Add a splash of balsamic vinegar for a little extra sweetness.

- Tongs
Ingredients
- 2 t olive oil
- 4 bacon slices
- 1 cup diced yellow onions
- 1 T minced garlic
- ⅛ t salt
- ⅛ t pepper
- 4 cups baby spinach
- Lemon wedges to serve
Instructions
- Cook the sliced bacon in a skillet over medium heat, until bacon is crispy on both sides. Set aside and cut into small pieces.
- Heat up the oil in the same skillet, saute the diced onions and minced garlic until onions are tender and the garlic is fragrant, about 2 minutes. Season with salt and pepper.
- Turn the heat to low. Add the spinach and toss with tongs to mix everything together. Cook until just wilted, about 2 minutes. Serve immediately topped with lemon wedges.
