Bacon lovers, rejoice! Crispy bacon on the outside and tender onion rings on the inside get dunked in a creamy avocado dip with a hint of lime. You’ll be begging for seconds.
Think savory onion rings jazzed up with rich, tasty bacon. Onion rings have always been one of my favorite foods, but instead of breading them in flour, we’re making these onion rings Paleo-approved by wrapping them in smoked bacon. Gluten-free and oh-so-delicious, these easy snacks are going to be a hit in your household. Pair them with the avocado dipping sauce that sings with lime flavor and you’re good to go!
The best thing about these rings is that they are easy to make and don’t need a lot of hands-on time. Start off by cutting large yellow onions horizontally into ½-inch thick rings – I find that the middle rings are the best for this purpose. Dip the rings into beaten eggs as the “glue” to make them stick, then carefully wrap them with strips of bacon before placing them on a baking sheet. While the rings are baking and getting nice and crispy, mash the avocado and stir in a bit of lime juice and water. Serve and enjoy!

Smoked Bacon-Wrapped Onion Rings with Avocado Lime Sauce

- Baking sheet
- Parchment paper
- Chef's knife
- Medium bowl
- Small bowl
Ingredients
- ½ lb smoked bacon, cut into thin slices
- 3 large yellow onions
- 2 eggs
- 1 large ripe avocado
- 1 T fresh lime juice
- 2 t water
Instructions
- Preheat the oven to 300°F. Line a large baking sheet with parchment paper.
- Peel and cut yellow onions horizontally into ½-inch thick rings. Pop out the internal rings until you get thick, steady rings.
- Beat the eggs in a medium bowl.
- Dip each onion ring into the beaten eggs and then wrap each ring with the bacon strips. I used three bacon strips per ring.
- Bake for 30 minutes, or until the bacon is cooked through and crispy.
- When rings are almost done, use a fork to mash the avocado with the lime juice and water until you get a creamy dip.
- Serve the bacon-wrapped onion rings with the avocado lime dipping sauce.
Tip: If you prefer a dip that is more sauce-like, add one tablespoon of water at a time until you get a “pourable” dip.
