Apple cider vinegar (ACV) is rich in probiotics, amino acids, and enzymes to help keep your gut health in check. Begin by placing the cauliflower florets into a large mixing bowl. Toss with avocado oil and apple cider vinegar. Then, spread the cauliflower evenly onto a baking sheet lined with parchment paper. Tip: Wait until the end to add your salt. This will help keep necessary moisture in during the baking process. Scatter the garlic slices on top and bake for 25-30 minutes. As the garlic roasts, they will crisp into golden brown chips. Finish with sea salt and parsley before serving.

Ingredients
- 1 medium head cauliflower, broken into florets
- 2 T apple cider vinegar
- 2 T avocado oil
- 3 cloves of garlic, thinly sliced
- 1/4 t sea salt
- 1/4 cup parsley, chopped
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Add cauliflower to a large mixing bowl and drizzle avocado oil and apple cider vinegar on top. Toss to coat.
- Pour the mixture on a baking sheet and spread evenly. Sprinkle shaved garlic on top and roast for 25-30 minutes.
- Top with sea salt and parsley before serving.
