The secret to a really good Caesar salad dressing? Anchovies! These flavorful little fishes add saltiness and a deep savory taste, without imparting any fishy flavor. Anchovies are also rich in Omega-3 Fatty Acids, which help you manage cholesterol and promote glowing, healthy skin. We definitely recommend that you use them in your dressing, but if you really don’t like anchovies, just swap it with chopped sun-dried tomatoes for a tangy, sweet twist.

To start, simply whisk together all the ingredients until well combined. Leftover dressing can be kept refrigerated in an airtight container for up to one week – be sure to shake or gently mix it before serving.

Ingredients
- 1 T lemon juice
- 1 garlic clove, minced
- 1 ½ t anchovy paste
- 1 t dijon mustard
- ¾ cup Paleo mayonnaise
- Salt and pepper to taste
Instructions
- In a mixing bowl, whisk lemon juice, garlic, anchovy paste and mustard.
- Add in the mayonnaise and whisk until creamy. Season with salt and pepper to taste.
