A one-pan meal equals easy cleanup and less time in the kitchen. This sirloin and sweet potato dish is ready to serve in just 30 minutes. It’s the perfect meal for hungry appetites and is bursting with mouthwatering flavor.

Sweet potatoes complement the herbs and steak while offering ample amounts of fiber and beta carotene. (2) For more flavor, leave the skin on the sweet potatoes for extra crispiness. You can even experiment with other dried herbs like oregano or thyme.
Grass-fed ghee creates a rich flavor smothering each bite. It’s packed with antioxidants, and also a great choice for high-heat cooking. Clarified butter has a higher smoke point than butter or olive oil, so it won’t easily burn.
To get started, create the dry seasoning by combining the basil, dill, sea salt, and black pepper in a small mixing bowl. Set aside and begin melting two tablespoons of ghee over medium heat in a skillet. Add the sweet potato fries and half of the dry herbs, then cook for 10 minutes. (Make sure to flip halfway through for even browning). Set sweet potato fries aside on a plate and begin cooking the steak.
Next, add the sliced steak to the skillet, along with remaining dry herbs. Cook for five minutes and stir in the minced garlic. Let it heat in the pan for an additional two minutes to lightly brown. Push the steak to one side of the pan and add in the sweet potato fries. Drizzle the remaining ghee over the steak and potatoes and let it cook for three minutes to heat through. Serve warm with fresh parsley and enjoy!

- 10-inch cast iron skillet
- Small mixing bowl
Ingredients
- 1 t dried basil
- 1/4 t dried dill
- 1/4 t sea salt
- 1/8 t black pepper
- 3 T melted ghee, divided
- 1 lb sweet potatoes, sliced into wedges
- 1 lb sirloin steak, sliced into thin strips
- 1 t minced garlic
- 1/4 cup fresh parsley, chopped
Instructions
- Mix together dry seasonings in a small bowl and set aside.
- Heat two tablespoons of ghee in a cast iron skillet over medium heat for two minutes. Add the sweet potato fries and season with half of the seasoning mixture. Cook for 10 minutes, rotating halfway through cooking. Set aside on a plate.
- Add the strips of steak into the skillet and coat with remaining dry seasoning. Cook for five minutes, stirring occasionally. Mix in garlic and continue cooking for an additional two minutes.
- Make room in the pan for sweet potatoes and add them back to the skillet. Drizzle remaining tablespoon of ghee over steak and potatoes. Cook for three minutes to heat thoroughly.
- Serve warm and garnish with fresh parsley.
