To get started, cut the cauliflower into florets and add to a food processor. Work in batches to pulse into small grains, but be careful not to overblend to a purée. You can also use pre-made organic cauliflower rice from the grocery store or use a grater instead – just make sure to discard any large pieces.
Next, caramelize the olive oil and onions in a skillet on medium-high. Cook for five minutes and add the cauliflower, lemon zest, and thyme. Sauté for five more minutes, then garnish with fresh parsley and basil. Serve immediately and enjoy!

Ingredients
- 1/2 head cauliflower, chopped into florets
- 1 T olive oil
- 1 red onion, chopped
- 2 T lemon zest
- 1 t fresh thyme leaves
- 2 T fresh parsley, chopped
- 2 T fresh basil, chopped
- Salt and pepper, to taste
Instructions
- Work in batches and place chopped cauliflower into a food processor. Pulse until you get a rice-like texture.
- In a medium skillet, add the olive oil and onion. Sauté for five minutes on medium-high.
- Stir in the cauliflower rice, lemon zest, and thyme. Cook for an additional five minutes.
- Garnish with parsley and basil.
- Serve and enjoy!
