With its crisp texture and mild flavor, kohlrabi makes the perfect veggie swap for white rice noodles and is a great way to sneak in extra vitamins and minerals. The bulbs can be found in both green and purple colors with a taste that’s similar to jicama or radish. Pair it with creamy avocado to round out the flavor and add a bit of extra healthy fats.

For a hint of tang, you can prepare homemade pickled cabbage with apple cider vinegar (find our favorite pickled recipes here) or you can find some pre-made at your local grocery store. To get started, whisk together the ingredients for the dressing in a small mixing bowl. Divide spiralized noodles and veggies among two serving bowls, then top with sesame seeds, chopped cashews, and jalapeño. Drizzle the dressing on top and enjoy! - Small mixing bowl
For the Dressing:
- 1/4 cup avocado oil
- 2 T lime juice
- 2 T honey
- 1 T chopped cilantro
- 1/8 t salt
For the Noodles and Vegetables:
- 4 cups spiralized kohlrabi noodles, stems and leaves removed
- 1/2 cup thinly sliced cucumber
- 1/2 cup shredded carrot
- 1 cup pickled purple cabbage
- 1/2 an avocado, sliced
For the Toppings:
- 1/2 t black sesame seeds
- 2 T chopped raw cashews
- 1 T sliced jalapeño
- In a small bowl, whisk together the ingredients for the dressing and set aside.
- Divide the kohlrabi noodles and remaining vegetables among 2 serving bowls, then top with sesame seeds, cashews, and jalapeño. Drizzle the dressing on top and toss lightly before serving.
- Serve and enjoy.
