- Baking sheet
- Parchment paper
- Mixing bowl
- Wooden spatula
Cheesy Pesto:
- 2 cups raw unsalted cashews
- 1 T olive oil
- 1 T dried basil
- 1/4 t garlic powder
- 1 T nutritional yeast
Mexican Hot Chocolate:
- 2 cups raw unsalted cashews
- 1 T coconut oil, melted
- 1 T cacao powder
- 1/8 t cayenne
- 1 t stevia
Thai Curry:
- 2 cups raw unsalted cashews
- 1 T olive oil
- 1 T curry powder
Gingerbread:
- 2 cups raw unsalted cashews
- 2 T pure maple syrup
- 1 t grated ginger
- 1/4 t nutmeg
Everything Bagel:
- 2 cups raw unsalted cashews
- 1 T extra virgin olive oil
- 1/2 t sesame seeds
- 1/4 t poppy seeds
- 1/8 t granulated onion
- 1/4 t sea salt
Sriracha Lime:
- 2 cups raw unsalted cashews
- 2 T lime juice
- 2 T Paleo sriracha
- Preheat the oven to 325°F and line the baking sheet with the parchment paper.
- Combine the cashews in a mixing bowl with your flavor of choice and stir well, evenly coating the cashews.
- Pour the cashews onto the baking sheet and bake 20-25 minutes, stirring after 15 minutes with a wooden spatula.
- Allow the cashews to cool at room temperature for 10 minutes.
Tip: Once the cashews are roasted, let them cool at room temperature to seal in the flavor and dry. This is especially helpful for stickier cashews containing honey or maple syrup.
