Whip up a big batch in under 10 minutes and use on cupcakes, cakes, or cinnamon rolls!
To perfect the texture, allow your cashews to soak for at least four hours ahead of time. This will allow them to plump up and soften for easy blending, plus it helps breaks down enzymes and acids for easier digestion. For other tasty options, you can also swap out the honey for equal amounts of maple syrup (making it vegan-friendly) or add in a tablespoon of raw cacao powder for a rich chocolate flavor.

To get started, drain the cashews and add to a food processor with honey, lemon juice, and vanilla bean paste. (The lemon juice will add the tangy flavor that cream cheese is known for). Blend for about 15 seconds or until the mixture becomes crumbly.
Next, pour in a quarter cup of water and continue pulsing for two more minutes. You’ll know it’s ready when it becomes smooth and fluffy. If the mixture is still thick, add in an additional quarter cup of warm water. Then, scoop into an airtight jar or frosting piper and begin topping your desserts. You can store leftovers in the refrigerator for up to one week.
