While most frosting is sweetened with powdered sugar, this Paleo chocolate frosting uses coconut sugar as a healthier alternative. To achieve the same powdery texture, pulse coconut sugar granules in a food processor, high-speed blender, or coffee grinder for five seconds. The powdery texture will be necessary for a smooth frosting, without the gritty texture. Tip: Use blended coconut sugar as a Paleo-friendly alternative, anytime a recipe calls for powdered sugar.
Next, combine the butter and powdered coconut sugar in a medium mixing bowl. Be sure to use butter at room temperature for easy mixing. Use an electric mixer on low-medium speed to thoroughly combine for about 30 seconds. Gradually add in the cacao powder and continue blending, then toss in the coconut cream and mix until fully incorporated. Spoon into a jar, cover, and store in the refrigerator for up to two days. - 1 cup cacao powder
- 1/4 cup unsweetened, room temperature coconut cream
Instructions
- Add coconut sugar to a food processor and blend for 5 seconds or until you get a powdery texture.
- Combine the butter and powdered coconut sugar in a medium mixing bowl. Use an electric mixer on low-medium speed to thoroughly combine for 30 seconds.
- While mixing, gradually add in the cacao powder, then add in the coconut cream. Continue blending until fully incorporated for at least 30 seconds.
