This recipe transforms cod into a deliciously spicy meal with just a handful of healthy ingredients. With a crunchy layer of hemp seeds and coconut flour wrapped around it, this baked cod has the taste of deep-fried fish but with a serious nutritional bonus!

The recipe comes together by dunking cod loins (the middle, fattiest part of the filet) into an egg wash and hemp seed mixture and then baking it. The whole process takes 30 minutes, making this dinner perfect for quick and easy weeknight meals. Serve with a side of cauliflower rice or cooked veggies for a well-rounded meal your taste buds will love you for!

Baked Cod with Hemp Seed Coconut Crust

- 2 small mixing bowls
- Paper towel
- Baking pan
Ingredients
- 2 wild cod loins
- 1 large egg
- 2 T water
- ¼ cup coconut flour
- ⅓ cup hemp seeds
- ¼ t paprika
- ¼ t cayenne pepper
- ½ t garlic powder
Instructions
- Preheat the oven to 375°F.
- Crack the egg into a small bowl. Add 2 tablespoons of water and then whisk together until completely mixed.
- In a separate bowl, combine the paprika, cayenne pepper, garlic powder, coconut flour, and hemp seeds. Sift the ingredients until everything is combined.
- Place cod loins on a paper towel and pat dry. Make sure they are very dry before dipping into the egg wash!
- Next arrange the following items in order from first to last: egg wash bowl, flour mixture, and a baking pan sprinkled with flour mixture where you plan to place the cod loin.
- Dip one cod at a time into the egg wash, then into the flour mixture. Cover the loin completely with the mixture, tossing it around several times to coat.
- Then place cod on the baking sheet on top of the flour mixture.
- Repeat the process for the remaining cod loin.
- Bake for 22 minutes until brown and slightly crispy.
- Remove from the oven and serve immediately.
