Almond Carob Ginger Cookies
Ingredients
- 1/2 cup coconut oil (melted)
- 1 heaped tablespoon raw honey
- 1 cup almond meal
- 1/2 cup carob powder
- 1 tablespoon ground ginger
- pinch of cinnamon
How To Make It:
1. Melt the coconut oil in a small pot over low heat to remove any solidified lumps. Remove from the heat then add the honey, almond meal, carob powder, cinnamon and ginger and combine well.
2. Use the palms of your hands to roll a tablespoon of the mixture into a ball, then place onto a sheet of baking paper and press down with three fingers to make a round cookie shape. Repeat with the remaining mixture.

3. Place the cookies into the refrigerator for 4-6 hours, or until firm to touch.
4. Serve.
