Give your salad a healthy kick with this Spicy Roasted Cauliflower, Kale and Carrot Salad! A quick, anytime meal that’s satisfying and delicious.
This healthy meal comes loaded with a powerhouse of superfoods, including crunchy kale, anti-inflammatory cauliflower, carrot ribbons, and pumpkin seeds. This way you get vitamin C, fiber, healthy fat and more nutritious benefits in one bite!
If you want to soften the kale, you can mix it with the dressing. Just place the kale in a separate bowl, pour half of the dressing on top, massage the dressing into the kale with your hands, and let it all sit for 30 minutes. To save time, let the flavors mingle while the cauliflower is roasting. The kale soaks up the spiciness from the dressing and softens the veggie if you like less of a crunch.

From there, simply layer the rest of the salad ingredients once the cauliflower is ready and drizzle with more dressing. The red pepper and Dijon mustard give the whole dish a bit of creamy heat, while the lemon juice adds a lovely tartness. A perfect midday meal to re-energize with!

Spicy Roasted Cauliflower, Kale and Carrot Salad
For the Salad:
- 2 cups kale
- 2 cups cauliflower
- 3 small carrots
- 2 T pumpkin seeds
- 1 t extra virgin olive oil
- Salt and pepper, to taste
For the Dressing:
- 1 t red pepper flakes
- 1 t Dijon mustard
- 2 T extra virgin olive oil
- 1 T lemon juice
- Salt and pepper, to taste
- Preheat oven 375°F. Prepare a baking sheet with parchment paper.
- Transfer cauliflower florets onto parchment paper. Drizzle with extra virgin olive oil and sprinkle with salt and pepper.
- Bake for 40 minutes until browned around the edges.
- While cauliflower is roasting, whisk together dressing ingredients in a small bowl. Set aside.
- Using a vegetable peeler, peel the carrots into thin ribbons.
- Remove cauliflower from the oven and cool on the baking sheet while you assemble the salad.
- To assemble the salad, layer the kale, carrot ribbons and cauliflower. Sprinkle pumpkin seeds on top. Drizzle with dressing and enjoy!
Tip: Add chicken, lamb, fish or eggs for extra protein!
