Start by deveining and peeling large shrimp, or buy them pre-peeled to speed up your prep time. Next, whisk together a tangy sauce with orange juice, honey, coconut aminos, and garlic, and let the shrimp marinate in the sauce while you prepare the broccoli. Tip: Try doing this step a few hours ahead of time to maximize the flavor.
Next, bring a pot of water to a boil while you chop the broccoli into florets. When the water is boiling, add the broccoli and cook for 2-3 minutes, then drain and set aside. If you like your broccoli a little crunchier, you can skip this step entirely.
In a large pan or wok, add the avocado oil and set over medium high heat. Remove the shrimp from the marinade and set the sauce aside. Once the pan is nice and hot, add the shrimp to ensure a nice sear on the outside. Shrimp cooks quickly, so cook for just about 3 minutes, or until the shrimp is pink and opaque.
Remove the shrimp from the pan, add the sauce, and simmer until thickened. Then, add the shrimp and broccoli and cook until warmed through entirely. Serve the orange stir fry over a bed of cauliflower rice and garnish with chopped green onions and sesame seeds.
