Easy, 3-layered Neapolitan popsicles made with real ingredients and dairy-free coconut milk!
Running to the ice cream truck might seem like a distant memory, but the satisfying flavor of a cool treat on a hot day is something that we all still crave as adults. These triple-flavor Neapolitan popsicles have layers of rich cacao, coconut-vanilla and real strawberry for a guilt-free summertime staple.
The layers of chocolate, vanilla and strawberry are all made from a base of sweetened coconut milk, with simple ingredients that offer health benefits you won’t find in the frozen section of your grocery store. Raw cacao powder offers rich chocolate flavor with four times the antioxidant content of regular chocolate, while fresh, summery strawberries bring a healthy dose of vitamin C.

Start by blending coconut milk with raw honey. Divide the mixture among three small bowls (these will be the base for each flavor). Whisk raw cacao powder into one bowl, vanilla powder into another, and blend strawberries with the remaining coconut milk until smooth. Now comes the fun part – layering! Pour a little of the chocolate mixture into the bottom of popsicle molds and freeze for 1 hour. Next, add the vanilla, insert a popsicle stick, and freeze for another hour. It might help to cover the mold with aluminum foil or a lid to hold the sticks in place. Finally, add the strawberry layer and freeze for at least 2 hours to ensure the popsicles are evenly frozen.
When it’s time to indulge in your homemade pops, run the molds under lukewarm water to loosen.

- 3 small bowls
- Popsicle molds
Ingredients
- 3 cups full-fat coconut milk
- 2 T raw honey
- 1 cup strawberries, stems removed
- 1 T raw cacao powder
- Pinch of vanilla bean powder
Instructions
- In a blender, combine coconut milk and honey until smooth. Divide mixture evenly among 3 small bowls.
- Combine strawberries with 1 of the bowls of coconut milk in blender and pulse until smooth. Return to bowl. Whisk vanilla bean powder into another one of the coconut milk bowls and cacao powder into the third.
- Pour cacao mixture evenly into the 6 popsicles molds and freeze 1 hour, leaving the other two bowls in the refrigerator. Repeat with vanilla mixture, insert popsicle sticks and freeze 1 hour. Repeat with the strawberry mixture and freeze for at least 2 hours.
