Eating grain-free doesn’t mean giving up your favorite bowl of warm oats. Simply replace traditional oats with heart-healthy nuts and seeds to achieve the same hearty thickness and texture of real oats. Plus, when you make it in the Instant Pot, it only takes five minutes!
This recipe calls for raw almonds, cashews, and pumpkin seeds for a chewy consistency with a hint of crunch – while raw honey, vanilla, and shredded coconut add a subtle touch of sweetness. A little water helps thicken the ingredients to perfection, or you can use a dairy-free milk to add an even richer flavor.

Tip: If your “oats” comes out dry, stir in more water or milk (about ¼ cup at a time) until you get the right consistency.

Ingredients
- ½ cup cashews, raw
- ½ cup almonds, raw
- ¼ cup raw pumpkin seeds
- 1/3 cup shredded coconut, unsweetened
- ½ t vanilla extract
- 1 T raw honey
- ¼ t salt
- ½ t coconut oil
- 1 ¼ cups water
- Optional toppings: fresh berries, nuts, seeds
Instructions
- Place cashews, almonds, pumpkin seeds, and coconut in a blender and pulse for a few seconds until it becomes crumbly.
- Transfer the mixture to the Instant Pot and mix in the vanilla, honey, salt, coconut oil and water.
- Close the lid, move the valve to “sealing,” select the porridge setting, and set the timer to 4 minutes.
- Release the pressure valve manually, or let it auto-release on its own.
- Serve warm, topped with fresh berries, nuts, or seeds.
