The dressing uses unfiltered apple cider vinegar (ACV) to house enzymes and amino acids in small strands called, “The Mother.” Its acidic nature can help ward off parasites and line the gut with powerful probiotics. Raw honey balances out the tartness from ACV with extra sweetness and brings a dose of antioxidants while also helping to fight inflammation. (1) To bring it all together, you’ll add avocado oil filled with heart-healthy fats.
To get started, begin slicing the cucumbers as thinly as possible. Using a medium mixing bowl, toss the cucumbers and red onion into the dressing and refrigerate until ready to serve. Tip: Letting the salad refrigerate between 30 minutes to an hour, helps marry all the flavors.

- Medium mixing bowl
- 2 medium cucumbers, thinly sliced
- 3 T fresh dill, chopped
- 1/2 a medium red onion, thinly sliced
- 1/4 cup apple cider vinegar
- 2 T avocado oil
- 2 T raw honey
- 1/4 t sea salt
- In a large mixing bowl, combine dill, apple cider vinegar, avocado oil, honey and sea salt. Whisk together until all the ingredients are combined.
- Add the cucumbers and onion, toss to coat, and refrigerate until ready to serve.
