Ingredients
- 2 cups almond flour
- 1/3 cup tapioca flour
- 1 T cinnamon
- ½ t ginger
- ½ t baking soda
- 3 large eggs, room temperature
- ¼ cup organic orange juice
- ¼ cup coconut sugar
- 2 T melted coconut oil
- 1 t pure almond extract
- 3 t orange zest
- ½ cup fresh cranberries
Instructions
- Preheat the oven to 350°F. Line a 9 x 5 inch baking pan with parchment paper.
- In a bowl, sift together almond flour, tapioca flour, cinnamon, ginger and baking soda.
- Place the eggs, orange juice, coconut sugar, coconut oil, almond extract and orange zest in a separate bowl. Mix until smooth.
- Slowly stir the dry mixture into the wet mixture. Do not over mix.
- Fold the cranberries into the batter, then transfer to the prepared baking pan.
- Bake for 35 minutes or until set and a toothpick can be inserted clean.
- Remove from the oven. Cool for 1 hour in the pan before slicing.
