The raisins included in this recipe add a sweetness that blends perfectly with the earthiness of the olives. When simmering, they plump up in the sauce for a rich, hearty flavor. As an alternative for picky eaters, the raisins can be left out without compromising the sauce.
Cauliflower rice replaces traditional rice for an added dose of fiber and antioxidants. For this recipe, you can choose to lightly sauté the cauliflower rice or to serve it raw with the meaty beef sauce on top.

Bone broth adds a combination of collagen and amino acids to help support your skin, joint, and gut health. It’s made by simmering beef bones in water to draw out the collagen-rich marrow. You can purchase pre-made bone broth at any health food store or make your own at home (this is our favorite bone broth recipe).
To get started, brown the meat in a large sauté pan (or Dutch oven) with sides high enough to hold the liquid for the sauce. Stir and crumble the meat before adding in the bell pepper, onion, cumin, and garlic. Let it cook uncovered for 10 minutes to allow the meat to fully cook through.
Next, stir in the carrots, apple cider vinegar, tomato sauce, bone broth, raisins, olives, and sea salt. Bring to a simmer and reduce the heat to low, allowing it to cook for 10 minutes. Serve hot over cauliflower rice and garnish with chopped cilantro. You can also store leftovers in an airtight container within the fridge up to one week.

Ingredients
- 1 T ghee
- 1 lb ground beef
- 1 chopped green bell pepper
- 1/2 cup chopped sweet white onion
- 1 T cumin
- 1 t minced garlic
- 1 cup shredded carrots
- 2 T apple cider vinegar
- 1/2 cup tomato sauce
- 1 cup bone broth
- 1/4 cup raisins
- 1/4 cup green olives
- 1/2 t sea salt
- 6 cups cauliflower rice
- 1/2 cup chopped cilantro
Instructions
- Heat the ghee over medium heat in a large sauté pan and add the ground beef. Use a spatula to break up the beef into crumbles and stir in the bell pepper, onion, cumin, and garlic. Cook uncovered for 10 minutes.
- Stir in the carrots, apple cider vinegar, tomato sauce, bone broth, raisins, olives, and sea salt. Bring to a simmer and reduce heat to low. Simmer for 10 minutes, uncovered.
- Serve over cauliflower rice and finish with chopped cilantro.
