Start by boiling grated ginger to get rid of the protease (the enzymes which prevent gelatin from binding and solidifying). Don’t skip this step, or it will prevent the gelatin from solidifying! Drain the boiled ginger and set aside.
In a large skillet or saucepan, combine the kombucha, honey, grapefruit juice and zest, and then sprinkle gelatin powder over it to let it hydrate for a few minutes. Heat up the mixture slightly so the gelatin powder dissolves completely. Be careful not to heat it too much!
Once dissolved, transfer the gelatin mixture and the ginger into an electric blender and pulse until combined. Pour the processed mixture into a glass pan and let it chill for at least three hours or until it is firm to the touch, then slice and enjoy!
Tip: If you find the taste of ginger too strong for your liking, you can simply reduce the quantity or omit it from the recipe.

- 9x9-inch glass pan
- Plastic wrap
- Medium pot

Ingredients
- 1 t grated ginger
- 1 ½ cups plain kombucha
- 1/2 cup grapefruit juice
- 1 T grapefruit zest
- 6 T honey
- 1/3 cup gelatin powder
Instructions
- Line the bottom of a 9x9-inch glass pan with plastic wrap.
- Add the grated ginger to a medium pot with water and bring to a boil. Let the ginger boil for five minutes to kill the protease enzymes. Drain and set aside.
- In a large saucepan, combine the kombucha, grapefruit juice, zest, and honey, and mix well. Sprinkle the gelatin powder over it and let it hydrate for a couple of minutes.
- Switch on the heat to medium-low and let the mixture gently heat up so the gelatin powder dissolves. Mix until the gelatin is fully dissolved.
- Combine the gelatin mixture and the boiled grated ginger in a blender and pulse for 20 seconds.
- Pour the mixture into the prepared glass pan and chill for at least 3 hours or until firm. Then slice into small squares and serve!
